Ingredients:
For the cookie base:
300 g ground biscuits (e.g. butter biscuits)
100 g melted butter
160 ml milk
2 tablespoons of powdered sugar
For the kadaif pistachio filling:
250 g Kadaif (oriental vermicelli)
100 g melted butter
3 tablespoons pistachio cream
2 tablespoons chopped pistachios for that extra touch
For the mascarpone cream:
250 g mascarpone
1 tablespoon powdered sugar
1 tablespoon pistachio cream
300 ml of well-chilled cream
2 packets of whipped cream (for extra stability)
For the ganache:
150 g milk chocolate (alternatively dark chocolate for a more bitter note)
100 ml cream
For decoration: chopped pistachios, edible gold or fine chocolate chips
— Preparation:
1. The biscuit base Mix the ground biscuits with melted butter, milk and icing sugar in a large bowl. The mixture should be slightly moist but still malleable. Press the mixture evenly into a 26 cm springform pan. Place the pan in the fridge for at least 30 minutes to allow the base to set.
2. The Kadaif Pistachio Filling Tear the kadaif vermicelli into smaller pieces with your hands. Melt the butter in a pan and fry the kadaif until golden brown. Stir in the pistachio cream until well combined. Chopped pistachios can be added for a crunchy texture. Pour the cooled mixture evenly over the biscuit base.
3. The mascarpone cream Mix the mascarpone, powdered sugar and pistachio cream in a bowl until smooth. Beat the well-chilled cream with the two packets of whipped cream until stiff and carefully fold into the mascarpone mixture. Spread the finished cream on the kadaif layer and smooth it out.
4. The chocolate ganache Heat the cream in a small saucepan (do not boil!). Pour the hot cream over the finely chopped chocolate. Allow the mixture to rest for 2-3 minutes before stirring until smooth. Allow the ganache to cool slightly and then carefully pour it over the mascarpone cream.
5. Decoration and cooling Decorate the cheesecake with chopped pistachios, edible gold or fine chocolate chips. Leave to rest in the fridge for at least 4 hours, ideally overnight.
